The New Caledonia’s blue prawn is product in a limited quantity by responsible and very demanding aquaculturists. It is the only French prawn recognized as ‘sashimi’ quality in Japan. Its nonesuch taste, its melting and steady flesh, and its great blue color make it a seafood especially appreciated by Chefs and consumers. Cooked, without food coloring additive, it turns to a beautiful orange-pink hue.
